Tong Choy


  • 1 package tong choy
  • 1 tablespoon minced garlic
  • 2 teaspoons shredded ginger
  • Shredded chiles
  • 1/2 teaspoon sugar
  • 2 teaspoons fish sauce
  • 2 teaspoons rice wine, plus 3 cubes bean curd


Tear the greens.
Bloom the aromatics.
Add wine, chiles, water (mixed with bean curd).
Stir, add greens.
Wilt greens.
Add sugar, mix.
Add fish sauce.
Add 100 ml water.
Cover, cook for 1 minute.
