Dennis' Waffle Batter


  • 2 cups all purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon (optional)
  • 3 eggs, separated
  • 1-1/4 cups non fat milk
  • 1/3 cup extra virgin olive oil


Sift together flour, sugar, baking powder, salt and cinnamon.

In a small bowl, beat egg whites until stiff. Set aside.

In a large bowl, beat egg yolks well. Stir in milk. Add dry ingredients to the egg yolks and mix until just moistened. Do not overmix. Add olive oil. Fold in the beaten egg whites.

Cook in a pre-heated waffle maker for 5-6 minutes.


Notes

If desired, sprinkle batter with chopped pecans before closing the lid of the waffle maker.

The batter can be frozen for later use.

Makes 8 servings.
