Setzkuo-san's Sushi Rice


  • 4 rice cooker measures Jasmine rice
    (typically about 3/4 cup)
  • 4 tablespoons rice vinegar
  • 4 tablespoons granulated sugar
  • 1/2 teaspoon salt


Rinse the rice well and cook according to your rice cooker instructions. Spread the cooked rice in a very large bowl. Let it cool until it's easy to handle.

In a small microwave safe measuring cup, combine the vinegar, sugar, and salt. Microwave for about 30 seconds, until the sugar and salt dissolve.

Pour the mixture over the cooled rice and mix well with your hands.


Notes

You can use the rice right away, or cover and store in the refrigerator, then re-warm it briefly in the microwave before using.
