Quick Spanish Rice


  • 1 15-ounce can diced tomatoes, with juices
  • 2 cups vegetable or chicken stock
  • 1-1/2 cups white rice
  • 1 tablespoon butter or margarine
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin


Combine all ingredients in a medium saucepan, and bring to a boil. Reduce heat, cover and simmer for 25 minutes or until the rice is done.


Notes

Do not remove the lid during cooking or the rice will get sticky and gooey.
