Microwave Steamed Sole


  • 1 pound fresh sole fillets (4 fillets)
  • 2 thumb size pieces of fresh ginger, slivered
  • 1/2 pound fresh snow peas
  • 4 ounces fresh white mushrooms, thinly sliced (optional)
  • 2 green onions, French cut
  • 1/4 cup dry white wine
  • 1/2 tablespoon olive oil
  • Dash soy sauce


Combine all ingredients except fish in a large bowl and mix together. Place fish in a large flat covered casserole or baking dish and pour mixture over fish. Cover and steam in microwave on high setting for 4-6 minutes until the liquid bubbles a bit and the fish begins to flake. Remove from microwave and let stand, covered for an additional 4-6 minutes.
