Low Fat Turkey Stroganoff


  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cups sliced white mushrooms (about 8 ounces)
  • 1/3 cup dry white wine
  • Dash nutmeg
  • Salt and pepper to taste
  • 1 cup non fat sour cream
  • 1 pound hot cooked fettuccine
  • Smoked paprika
  • 2 chopped green onions (for garnish)


Heat oil in a large saucepan or small stockpot over medium-high heat. Add turkey and onion and cook, uncovered, until turkey is browned, stirring occasionally, about 20 minutes. Mix in mushrooms, wine, water and nutmeg. Season turkey with salt and pepper. Reduce heat, cover, and simmer 25 minutes, until mushrooms have released all their liquid.

Add sour cream to turkey and stir until heated through. Do not boil. Divide fettuccine on platters. Ladle turkey over, sprinkle with paprika and garnish with chopped green onion.
