Amanda's Italian Flat Bread

Preheat oven to 450F.
In a large bowl, sprinkle yeast over warm water and let stand for 5 minutes. Add sugar, salt and water. Add 2 cups flour and stir with a wooden spoon. Add remaining flour, a little at a time, and stir until you can handle it.
Flour breadboard and knead dough for 15 minutes. Place dough in a greased bowl and let rise 1 hour or until doubled. Knead dough briefly again to remove excess air bubbles.
Roll into a large rectangle. Place on foil or parchment, sprayed with non-stick spray, on cookie sheet, and turn up sides. Brush on olive oil, sprinkle on Italian seasonings, garlic and Parmesan cheese. Bake 12 to 15 minutes.
