Hot Italian Sausage


  • 15 pounds ground pork shoulder
  • 2 tablespoons salt
  • 1/4 cup garlic powder
  • 1 tablespoon ground black pepper
  • 1/2 cup smoked paprika
  • 1 cup canola oil
  • 1 tablespoon anise seed
  • 1 tablespoon fennel seed
  • 1/4 cup crush red pepper flakes


In a large bowl, combine pork, salt, garlic powder, black pepper, and paprika. In a blender or food processor, blend oil and remaining spices. Mix well with the pork mixture.

Portion and freeze according to your needs.
