Homemade Yellow Cake


    Cake Mix

  • 2-1/4 cups all purpose flour
  • 1-1/2 cups sugar
  • 3-1/2 teaspoons baking powder
  • 1 teaspoon salt

    Batter

  • 1-1/4 cups milk (I use plain low fat soy milk)
  • 2 tablespoons canola oil
  • 1/2 cup (1 stick) butter, softened
  • 1 tablespoon vanilla extract
  • 3 eggs


To prepare the Cake Mix:

Sift the flour, sugar baking powder and salt into a large bowl.

To prepare the cake:

Preheat oven to 350F.

Using a stand mixer, mix softened butter on medium speed for 1-2 minutes. Add the Cake Mix, and combine with the butter for 30 seconds. Add the remaining Batter ingredients, and mix on medium high for 1 minute.

Divide the batter into two greased and floured 9-inch pans or cupcake liners. Bake 20-25 minutes (15-20 for cupcakes) until a toothpick inserted into the center comes out clean.

Cool on a wire rack for 10 minutes before removing from pans.


Notes

Cake Mix can be scaled, made ahead, and stored in an airtight container.
