Crustless Chicken Quiche


  • 1 cup chopped cooked chicken
  • 1 cup chopped broccoli, spinach, or cooked collard greens
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 5 large eggs
  • 1 12 oz. can evaporated milk (see notes)
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper


Preheat oven to 375F (non-convection).

Spray a 9-inch pie plate with cooking spray. Toss the chicken, broccoli, onion, and cheese together in the pie plate.

In a medium bowl, whisk together the eggs, milk, salt, and pepper, and pour over the chicken mixture.

Place the pie plate on a baking tray, and bake in the upper level of the oven, 35 - 40 minutes until a toothpick comes out clean.

Let stand for 10 minutes before serving.


Notes

As a substitute for evaporated milk, whisk together equal parts soy milk and thick nonfat Greek yogurt, with a pinch of sugar.
