Air Fry KFC Chicken Legs


  • 6 meaty chicken legs with skin left on
  • 1 egg
  • 1/4 cup milk (I use soy, but any milk will do)
  • 1 cup all purpose flour
  • 2 tablespoons granulated garlic
  • 1 tablespoon salt
  • 1 tablespoon finely ground black pepper
  • 1/2 teaspoon allspice
  • Cooking spray


In a large bowl, beat the egg well. Stir in the milk.

Pat each leg dry with paper towels, and pull the skin as far as it you can over the large end of the leg. Add each leg, turning to coat. Leave in the egg mixture while you prepare the coating.

For the coating, put the flour, salt, pepper, and allspice into a gallon ZipLock bag, seal, and shake to mix well. Shake the excess egg mixture off each leg, and drop it into the coating bag. Seal the bag, and shake until all the pieces are evenly coated.

Place the chicken on the air fryer rack, and spray both sides of the chicken well with cooking spray. Discard the excess coating mixture.

Preheat the air fryer to 370F (check that, might be 320F). Put the rack in the top slot of the air fryer, and cook for 30-40 minutes, depending on the size of the pieces, turning once halfway through.


Notes

I cut my food service teeth as a 16-year-old at KFC, and if I made (and ate) 9 pieces of that stuff, I made (and ate) 900,000 pieces of it over the next few years.

I'm calling this a knockoff, even though it's a billion percent healthier, and it's not greasy and doesn't have the layers and layers of breading that KFC has. It's more about the crispy texture of the skin, and it comes pretty close to the "11 secret herbs and spices" taste.
